Equipment needed
- [ ] Heavy pot — (can hold liquids/take stove heat)
- [ ] Tip: You can make this in an instant pot —> I'll have instructions ready if necessary
- [ ] Medium sauce pan
- [ ] Cutting knife
Ingredients
- [ ] 2.5 - 4 pounds of Chicken (~1kg)
- [ ] If you don't like meat, use less, if you want more yolo go for it
- [ ] For Winnie/Abe: yes, you can use bone-in chicken (it's actually recommended but I make it with boneless chicken) but make sure to remove skin and fat
- [ ] Yellow onions (2 cups) — this is typically 1 onion
- [ ] 2-3 Garlic cloves
- [ ] Chicken broth
- [ ] 1 tsp Ginger (fresh)
- [ ] 1.5 tsp Salt
- [ ] 1/4tsp + Ground red pepper (do what makes you happy here)
- [ ] Tomato sauce (8 oz)
- [ ] this comes in a can; don't use pasta sauce
- [ ] 1-2 tablespoonsTomato paste
- [ ] 1/2 -1 cup Peanut butter (minimal sugar)
- [ ] 5oz Okra (frozen) OR 8 fresh okra cut into small pieces
- [ ] Rice (enough to eat with dish)
- [ ] Optional: Scallions (as topping)
